 Lemon and zucchini make for a fresh and light combination. Soooooooooo good! I left the skin on the zucchini and it is really pretty in this bread actually. :)

Ready for a super moist and delicious recipe for
Lemon Zucchini Bread? 
Here ya go..........this is one of my favorites!!!!
Lemon Zucchini Bread
4 cups of flour
1 1/2 cups sugar
1 (3 .5 ounce) instant lemon pudding box
1 1/2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
4 eggs
1 1/4 cup milk
1 cup liquid vegetable oil
3 Tablespoons lemon juice
1 teaspoon lemon OR vanilla extract
2 cups shredded zucchini
1/4 cup poppy seeds (optional)
2 teaspoons grated lemon zest
Directions:
1. In a large bowl, combine the flour, sugar, pudding mix, baking soda and powder and salt.
2. In another bowl, whisk together the eggs, milk, oil, lemon juice and extract.
3. Stir into the dry ingredients until just moistened.
4. Fold in the zucchini, lemon zest and poppy seeds if you choose.
5. Pour dough into 3 greased load pans, or 2 larger loaf pans.
6. Bake at 350 for 50-55 minutes until a toothpick comes out clean.
7. Cool for 15 minutes before removing from pan to cool completely.

I made a little glaze frosting on top with powdered sugar and lemon juice and drizzled over. Mmmmmmmmm, enjoy the bread!

 This is a simple sweetheart wedding cake I made for today. The bride and groom are having this cake for pictures, and different cake to serve the guests. The inside of this cake is tinted purple ombre, lighter to darker shades. Earl and I made the cake stand out of a slab of wood that my Dad brought from up north. We sanded and varnished it and added legs. The bride has a simple rustic taste and she made their little cake topper. They are both high school teachers and the black board theme fits them well. :)
 I picked out the flowers for this cake and added those as well.




 What a special and wonderful day for Mike and Amiee! We wish them happiness always!
Amber is standing up in their wedding and both the bride and groom mean very much to her and we were glad to be a little part of their day.

WI State Fair

Is there anything neater than the Wisconsin State Fair? Good WI food, showcasing of WI talents in baking, cake decorating, canning, sewing, painting, photography, stitching, quilting, farm animals, garden plants and flowers, WI at its best.
Here is a variety of pictures that I took today as we made our way through the different exhibits.
